Pork fillets and Bacon Wrapped Cheddar filled Potato Cups

Pork fillets seasoned with Zehnders General Purpose Rub

To make the potato cups I just cut the top and bottom off a potato, took an apple corer and cored out the potato, cut a piece of the cored potato to make a plug which I held in place wit a toothpick and used the corer again to a block of cheddar cheese to get a chunk of cheese that would fit into the potato. Wrapped a slice bacon around the potato and cooked in a CI skillet till the potato was soft/done. Thanks Miloš Ješko for the idea!!!



 
Outstanding John. I was looking at something similar a few weeks ago. It kind of bugged me when he discarded the core piece. Like how you toasted it along with the cups.
 
Wow John that looks fantastic. Now I know what Potatos I'm serving at Thanksgiving.
