Pork Butt vs. Pork Picnic - Head to Head


 
the picnic 'pork shoulder/pernil' is leaner than a butt shoulder, i was wondering if this meant a temp lower than 190 should be aimed at for the picnic, else it would dry out sooner?
 
Benny great job and excellent pictures. The one thing I noticed was how can Tyson say 100% natural then use a 8% to 12% solution injected into the meat as a tenderizer??? I had pork chops already treated this way and it tasted like sh--. Did you notice any off taste?
 
i got 2 picnics to do sunday. i usually prefer butts, but the picnics were on sale and i was looking for something to smoke. i think i'm going to use the chris lilly injection on them and then baste every few hours to try and keep them from drying out.
