Pork butt on WSM

I wanted to do Pork Butt this weekend, I have two butts in the freezer, 3 pounds each, is it too late to take them out to thaw by Saturday am?

I know with chicken you are not supposed to let it sit out on the counter (although my wife has been doing that for 33 years), what is the story on pork butts, can I thaw them on the counter?

We do that all the time, but only bring the pork butt out for a couple of hours at a time, then it goes into the fridge for a while, then back out on the counter, etc. Two 3 lb butts should easily thaw out by Saturday....

Don't worry if they do not thaw all the way. They will thaw as you cook them. Done it before and turn out great. Just adds a little time to the cook.

I put them in a sink with cold water and keep an eye on them. They thaw pretty quick. You're 3 lb butts would probably only take a couple of hours to thaw if that. Just keep an eye on them and don't let them hang out in the water for too long after they're thawed.

The Food Temperature Danger Zone

Bacteria thrive between 40°F and 140°F

Bacteria won't multiply in the colder temperatures of a refrigerator or freezer, or at temperatures hotter than 141°F. Where they thrive is between 41°F and 140°F, a region known as the "Food Temperature Danger Zone."

To substantially reduce your chances of contracting, or passing along, a food-borne illness, make sure that your perishable foods never spend more than an hour in the Food Temperature Danger Zone.

Not only chicken. What does your wife thaw on the counter and how long does she leave it out before cooking?

I believe that if you had moved the butts from the freezer to the refrigerator when you made this post, they would have been thawed in time to cook on Saturday, especially since they are so small. I usually buy butts in the 7-8 pound range and thaw them for 2-3 days in the refrigerator, no need to put them in water or leave them out at room temperature.
