Pork butt and pork burnt ends

9.1 lb boneless, the larger one from a 2 pack.

It was loose and flappy so t trimmed the loose pieces off to cook separately. I think some will become pork burnt ends.

Went on at 8am this morning. JD lump with apple chunks. Home made pork rub, taken from here, without any brown sugar or white sugar.

The small pieces will be snacked on during the games followed by pulled pork sammies for dinner.

The butt went on at 8am Trimmed pieces around 9.30. Pics below about 10.30am.

Grate temp is 230. Probably 245 on the second rack.

So the burnt ends never happened.

And, I didn't eat dinner after snacking on the small strips.

Almost as tasty as ribs.
 
  • 1/2 cup paprika
  • 1/3 cup garlic salt
  • 1/3 cup kosher salt
  • 1 Tablespoon chili powder
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
This is my rub. Its the Chris Lilly without any sugar.
 
Had leftovers last night and this was my kids idea of a tasty treat. It may be in the top 10 combo bites of all time.
