Pork butt and chicken leg quarters

Did an 8.3 lb pork butt yesterday for 13.5 hours at about 225 degrees.

I put it on at 8am and this was at 9:30pm at 191 degrees.

No I planned to wrap it after 4 hours but I was reading some things online and it pretty much said wrapping is used to speed the cooking process and can ruin the bark. I wasn't in a hurry, so I changed my mind and didn't wrap it. Yes full foiled water pan and added some more after the first 7 hours.
