Pistachio Crusted Cod

Wild-caught cod was on sale at the supermarket today, so I decided to go with fish for dinner. This was a pretty simple cook — just seasoned the cod with salt & pepper, applied a light slather of mayonnaise, sprinkled some pistachio topping on the filets, and roasted them on the Performer.


 
I make pistachio crusted grouper and usually serve it with a really good chutney on top - kicks it up a bit.
