For today's Que, I cooked up a rack of babyback ribs and whole chicken on the 18.5" WSM. Ribs were seasoned last night with a rub I bought while on vacation a few weeks ago and placed in the fridge over night. Chicken (a 3.5 lb. "all natural" bird) was brined overnight in a mixture of water, salt, sugar, garlic powder, onion powder, black pepper, and dried thyme. Blue Kingsford was the fuel of choice and soaked apple wood chips provided the smoke. Ok, now for the pics....
This is about 1 hr. in. 225-250 is our target temp.
Chicken was also basted with butter prior to cooking. It gets done first.
Ribs were basted with Stubb's sauce the last few minutes of cooking

Plated with oven-roasted brussel sprouts (a must try, btw). Even my kids love these!
More Stubb's sauce was used
Chicken was delicious. Probably the best whole bird I've ever cooked. I may increase the amount of dry spices next time in the brine just to see if it adds to the flavor. Ribs were great as well.
