Thought I would share one of our favorites, Jac Pepin's Potato Leek Soup. Here is how he does it.
Main ingredients lined up, I make extra as it just get's better as leftovers. Two medium Leeks, about a dozen Baby Bellas and Instant Potato Flakes.
Cut trimmed and cleaned a la Jac's instruction
Though not in his recipe I know he would have liked the use of my leftover smoked Ham I needed to use
Leeks in first with some EVOO, then the Shrooms, let them sweat it for about five to ten minutes covered. When softened add chicken stock, I used for this size recipe 1.5 32oz containers.
After about ten minutes of simmering covered you add Potato Flakes, I used 1.5 cups for this size batch. Mix as you add and then cover and let simmer some more. I added my ham pieces now.
Kosher and Fresh Ground to taste, then turn off the gas and add a cup of whole milk.
So easy the taste makes you feel like a sneak.
