Peanuts Kajun Rubs


 
Well, I am trying it out. Picked up a hefty chunk of baby backs and rubbed em up.
Let sit for a few hours in fridge, then on counter 30 minutes while I prepped grill.
Doing them indirect on the gasser, with a couple of foil packets of Apple Pellets, 1 in smoker box
and 1 on lit burner. Temp dialed into 250 on the nose.
Will post pictures and taste results later.
 
Sounds like a rub with just a little bite which should be fine. Looking forward to the result. Btw what temp are u cooking At?
 
Cooked @ 250 for 2 hours with foil smoke packets (Applewood Pellets)
Wrapped in foil (poured melted butter Agave mixture on).
Then 1 hour at 300 wrapped.
Unwrapped and went another 1/2 hour at 250.
Fired up sear station, brushed on some Jack Daniels Sauce and caramelized sauce to meat.
Here's how they looked:

Taste: Was OK, but rub could be sweeter in my opinion, (personal preference).
Smoking on the Summit: Not the most satisfying smoke results. Could be part me, but I realize it's a Grill,
not a smoker. Will go back to smoking on 22.5 kettle for now, but June is shaping up
to be a good month for me, and I see an 18.5 WSM being added to my arsenal very soon.

Great looking Ribs !!! They seem nice and juicy.

Curious about why you weren't satisfied ?
Not enough or too much smokey flavor ?
Or was it the lack of a smoke ring (adding Morton Tender Quick to the rub will give an artificial smoke ring) ?

Bob - the rub lacked a Sweetness that I was looking for, I plan to add more brown sugar. I also felt I got a lack of
smoke from the gasser, but that could be my not hitting it right with foiled pellets.

That being said, I do not intended to practice smoking too much on the gasser, as I will be
stepping up to the plate and getting an 18.5 WSM in the next couple of weeks.
