Purchased an 18.5 wsm this week and just fired it up for a picnic shoulder. With almost no effort and not much time, the temp is locked in at 230. My previous POS smoker took forever to get to temp, and I had no way to control it once it got there.
It required constant vigilance to operate.

So, the question is...what do I do with all this extra time not spent minding the smoker? I'm leaning toward drinking beer and reading a book.

you could take a drive to Saskatoon and back... it'd probably still be at 230º...
 
STeve, good excuse for telling the little woman that you still need to monitor the smoker. Then, sit outside ,smoke a cigar,drink beer, invite a few buds over to "help", the list is endless. :-)

Well it does need constant monitoring. You shouldn't leave a fire unattended.
 
I'm with Bob and Paul! Constant monitoring (with beer in hand) and tunes is the only way for a consistent product...maybe a good time to get a fire pit if u don't already have one!

Ribs on the cooker along with some beans and tater salad in the fridge chilling!
 
My advice is to not mention to your wife that there is less work with this smoker and just enjoy sitting watching the dial even though it does not move.it is a tough job but we must make sacrifices to feed the family.

I've never been much of a drinker, but I say don't deny your inner self. A life lived with regret is poorly lived. Pass the time any way you want. And patiently teach your wife to join you in the good life!
 
Your next project is to find a $10 SJG and build a mini-wsm. Mine is a 240F monster - just sits and turns out butts and ribs. Gotta get my pals over to help me watch it. :-)

Not only "can you", but it is an absolute requirement to WSM ownership. Welcome to the wonderful world of BBQ'ing with the WSM.
