Break the cook down into a number of steps with each step defined by a specific goal.
Will make it sooo much easier to handle any 'issue'.
Proof that you never outgrow being the little brother. As a little brother try not to be too tough on him. As for brisket, I followed the recipe from Weber smoke cookbook. It turned out well. I had a harder time finding brisket than turkey
