I like smoked turkey, what can I say? I did the apple juice brine for about 5 hours and then added the garnishments

I haven't mastered appearance or texture, but the flavor was full on! I'd smoke more turkey if I could, but getting it fresh is a challenge. I'd like to figure out how to make it look better, but not if I have to give up flavor. This was supose to make lunches, but it didn't last the weekend
 
I see nothing wrong with the appearance of that turkey! To me , it looks awesome! Great job!

Where did you get your bird w/ the wing tips still on?
Winco (Brentwood, kalifornia) I was looking for Brisket around 8LBS and all they had were 12+ LBS Briskets. Then I saw that they had fresh turkey for just under $3 a pound. Kinda pricey, but it's hard to find fresh turkey these days...
 
We're big fans of smoked turkey around here, too, Chuck, and we probably do five or six a year (we just bought a turkey breast to smoke this week). I cook the Thanksgiving turkey inside in the oven, as I love the smell and I love basting the big giant bird I always get. We used to smoke one as well for the holiday but we don't host as many people anymore so that's a bit too much turkey. And I think your turkey looks beautiful, BTW...
 
Chuck it was looking kind of pale before it went in, but after you pulled it out of that WSM tanning booth it looks mighty fine!
