No seasoning cooks

Has anyone grilled or smoked a meat without using any kind of seasoning I ask because this past weekend I grilled some burgers ,no salt, pepper nothing just meat and charcoal, I think they tasted better seasoned after the cook or seasoning the garnish, like tomato with salt and pepper.

No I never do "no season" cooks, but am a believer that all the seasoning you usually need is just salt and pepper.

There are a lot of times that I use no salt at all. I will add pepper after the meat comes off the cooker. If the meat looks
really good, like a steak, sometimes just a pat of butter as it comes off with no other seasonings.

Depending on who is eating with us, sometimes I save seasoning for after the cook. One family member is super-sensitive to salt, so I usually go light or not at all on that when she is over.

I'm a firm believer that you need the salt. It's gotta come from somewhere whether it its the mustard or what have you. Otherwise it's just bland. That may just be an issue of the modern palate.

I will say this. I used to mix my seasoning into the meat. That's a huge mistake. You just need it on the surface.

I don't season burgers beforehand, but always sprinkle my steaks with kosher salt 60 minutes before grilling, then top with butter as they rest.

When whole chickens are on sale I will smoke them with nothing on them most of the time. I do this because I don't know what I am going to use the chicken for because I smoke it, shred it and then bag it up and put in the freezer for future meals.
