Hey everyone just introducing myself from Colorado. Got a WSM for my birthday in March and have been salivating to use it. I ordered some chunck wood the other day and plan to christen my smoker with my Jamaican Jerk chicken this weekend. I have always done makeshift smoking in an old cheap charcoal grill for years. For christmas I replaced the cheap grill with a good Weber charcoal and of course for my birthday my wife and in laws got me the WSM. Looking forward to a season of smoking and learning how to do this right! I'll let you know how it turns out.
