New to WSM 22


 
I agree with a double-tap on the top grate. Less hassle.
However, I would leave the lower grate in, and put a foil drip-pan in there. It will help enormously with the clean-up if you're using the waterpan.
Edit: If you're using a diffuser, & not the waterpan, put the drip-pan on the diffuser.

Going to smoke two 8 lb. pork butts. Should I put one on the top rack and one on the bottom, or put both on one rack? Thanks.
Sorry, I'm late to this party. But I'd definitely go with the top rack for both. It makes tending to them so much easier. If there's anything to be done to one of them, it will always be the one you need to move the top real out of the way for. With both on the top, they'll cook more evenly and hopefully eliminate having to tend to one more than the other.
 
Welcome to the world of smoking with the WSM 22! For two 8 lb. pork butts, you’ll get the best results if you use both racks. Put one on the top rack and one on the bottom. The top rack typically gets slightly better airflow and heat, so you might want to rotate the butts halfway through the cook to ensure even smoking.
You seem to be in the minority Arnold. There is ample space on one grate for two eight pound butts. Less cleanup too!
 
Even with the 18.5" there is enough room for two. With one 8# on the 22 it looks lonely so better give it company.
No muss no fuss no shifting from top to bottom.
