New The Huntsman Kettle Kamado Grill from Spider coming.

Sure is a good looking grill and I love those grates!
I have no horse in the race & I am good to go with numerous KG grates, what do you like about the style of these Huntsman grates, I have yet to develop an opinion on them, they are interesting to say the least.

Stainless spider webs on a grill named after a spider with a temp controller called a venom?? What’s not to like??

I guess I am with Bruno on the cool factor tie-in. But it is nice that Spider made the Huntsman compatible with my arsenal of 22” Weber kettle grates and accessories. Actually, one of my KillaGrilla grates would probably have been a better fit for low and slow ribs. I am, however, looking forward to trying the Huntsmsn stainless spider web grates on some steak and other searing cooks soon.
 
So I finally got around to seasoning and burning in the Huntsman this afternoon/evening. No issues connecting the venom and app, etc. But clearly have a bit to learn on charcoal bbq'ing. Mainly in the area of how much fuel to use and getting it going. Had a bit of a time getting it to the recommended 480'. Started off using some Cowboy briquettes and then added some lump to get it a little hotter and even some light wood. Combination of opening the door as well. I think I just didn't use enough fuel to start and I also only started using some starters and not a chimney.

Seemed to have a hard time maintaining 480' without opening the door. Thinking user error.

Thinking to try some ribs tomorrow.
 
I plan to do some high heat grilling next, so I will weigh in on how I do getting up to high heat. When I did the seasoning run, I was kind of cheap on how much charcoal I used. It took a good while to get over 400. I concluded that I skimped way too much.

I will post pics and results when I do my grilling. Need to clean it up from ribs first!

I am glad I used drip trays with water and apple cider (didn’t have juice) for my ribs. I highly recommend.

So I'm looking to set up and do my ribs tonight or this weekend. I don't have any of the diffusers or things Jon has above so don't think I can do the drip trays (?). I have the next level lower cooking system on order, but don't know when that will show up.

What is the best way to set for cooking ribs and perhaps a brisket until that comes? Charcoal to the side for indirect, but anything else?
 
I would use a drip tray large enough for your meat item on one side - obviously under it - and put the charcoal banked on the other side. The nice thing with the Huntsman is that you will be able to add charcoal and wood along the way, something my diffuser with a charcoal ring didn’t let me do. Be sure you position the charcoal side for access to add more fuel.

I said I was going to do high heat searing as my next cook, but instead I bought a pork shoulder to do North Carolina style. I am going to do something similar.
 
Started my cook a few hours ago. NC style with just salt and pepper (I usually use a rub) and rather than pulled it will be chopped:

I decided to try out a Weber kettle grate which fit perfectly. I see the thick, flat stainless Spider ones as best for steaks, burgers and the like.

I posted earlier about my Huntsman coming with an "extra" - an orange silicone shield to put over the tab on the vent. Tom Horsman had given the Spider Huntsman some great reviews but didn't like how hot the vent got and engineered his own "mod" to correct that. Well, I guess Spider listened and is now including this helpful shield. I (and I guess others) messaged Tom about the improvement.

They even sent Tom one:

 
Looks great but dump the water out of the bucket of wood, all it does is delay the smoke and cuts down on the heat. glad your liking the new grill/smoker.

I actually put one in first that was pretty much dry, but I have had wood chunks light on fire before, so I am a bit gun-shy. Appreciate the tip.
 
Successful Finish

I started my pork shoulder about noon and hoped to be done by midnight. No such luck, as it took until 2AM to finish. It was fun to go back to old North Carolina style chopped bbq. I still prefer pulled, but this made great sandwiches for Sunday dinner with family.

The Huntsman worked great, making charcoal grilling almost as easy as a pellet grill.
