Hello Forum, Thanks for letting Me in.

I need some advise I'm going to cook whole chicken wings on a 22" WSM. My intent is to use 4 grates and load it as full as possible. A water pan but no water maybe sand around 300+ degrees

Also the same scenario with Jalapeno peppers stuffed and wrapped with bacon on an 18" WSM same 300+ degrees

Can I do this - will the rendered fat from the bacon or chicken catch fire

Please help thanks

I normally bend the tips behind the drummie it makes a triangle and the tips don't poke through

I will use a a 15" grate above my bottom grate and a 22" grate above my top grate

same thing with peppers wrapped with bacon on the 18 WSM

high heat no h2o will it catch fire

any help appreciated

Empty water pan wrapped in tin foil, at least the top. Make sure to leave a slight depression in the foil to catch any drippings. That air space between the inside bottom of the water pan and the tin foil is your friend !!!
