I have just made up a classic meal loaf but weave some bacon and wrap the meat loaf prior to smoking/cooking.
Another addition I have done is hollow out some jalapeños and fill with cream cheese. Lay them down to be in the middle when forming the loaf.
When you slice the meatloaf, there will be nice coins of cheese filled jalapeños in the slice.
Something like this, had to get this off the internet. I can’t find the pictures of my meatloaf, as I had a bigger loaf so I had 2 or 3 stuffed peppers In it

Just removed the meat loaf after being in the freezer for 4+ hours. I hit it with a light slather, some homemade BBQ sauce, and some Mad Hunky rub. I popped it on the rig around 1:30 pm at 250. I'll be checking on it around 4:45 pm EST. More to come. Stay tuned

I added 1 pound of Jimmy Dean breakfast sausage to 3 pounds of 80/20 ground chuck

I like to mix some Italian sausage in with the beef, and swaddle the polish sausage in the middle. It’s just fun!
