NC & Texas bbQ

What is the difference between Texas and North Caroling BBQ except for the sauce?

I actually like BBQ beef more than pork. Is there a difference in the cooking method?
 
Texas BBQ generally doesn't have any sauce, just dry rubs. And yes lots of beef brisket and beef ribs.
 
When I think NC, I think vinegar then pork. When I think Texas, I think beef then spice (wet and dry). Weird because I was told once that Texas has more pigs and chickens than people... For KC, I think lots of sauce. For Memphis, rub & dry. I know this is not the case but I don't know where I got these thoughts.
 
At Ft Bragg we did pig pickins with a vinegar based sauce.

I grew up in East Tx and had brisket and sausage. A BBQ sandwich was pulled beef. The sauce was a thickened red sauce.

Thats why I always coming up with crazy ideas for BBQ...From Texas but spent years in NC (Ft Bragg also).
