My Wife Made the Tacos, I Made the Beans

My wife made some delicious tacos with some of the left over brisket. Last week I made some scratch beans for another cook and had a bunch of the cooked beans left over. Thought I'd do some refried beans (Tony's Recipe) to go along with the tacos.

Some onion.



Added beans and peppers. These beans are pretty dark as I cooked black and red. Tony's recipe calls for Pinto.



First mash.



Second mash. Sorry about the darned shadow.



All done.



My wife's Tacos. In addition to the brisket, there is avocado, sliced jalapeno, her homemade pickled onions and cilantro. It was a build as you go meal, and was delicious. The beans were delicious too. Added 10 of the Chile de Arbol as I doubled Tony's recipe. Seasoned with sea salt and coarse black pepper.

Is that pickled red onion? I'm a huge fan of that, perfect to cut through the fatty brisket, works especially well on tacos!
 
I'd say you and the wife did great Cliff! Been making Tony's beans for a while now, good stuff!
