My new favourite rub for ribs

Tried this on some oven-roast back ribs last night (too much snow still here to smoke IMO) and OMG, it is soooooooo good.

Coffee Spice Rub​

Ingredients:
3 tablespoons ground coffee
1 tablespoon coarse salt (kosher or sea)
1 tablespoon dark-brown sugar
2 teaspoons sweet paprika
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon unsweetened cocoa powder

Instructions
Combine all ingredients in a mixing bowl and break up any lumps with your fingers or a whisk.

Used all of this on 5lb BB and you have to know, I do like sauce on my ribs but as this was a first-time use, I had to sample "naked" ribs.

No sauce used !

All the flavours just blend perfectly and not one stands out by itself. I thought the coffee or cocoa might but nope, could not identify them singly.

Just an overall smooth flavour to these.

BTW, 5 lb BB in a covered roasting pan at 275o for exactly 3 hr. Still a bit of pull/chew to them when done but bones came away clean.

 
Now, the ground coffee I used was fresh medium ground from beans. Reading the comment there, it's suggested to do a find grind in a blender. MAYBE instant?? Dunno about that but doing this medium grind, there was no bitterness nor chunky stuff. I also smeared yellow mustard on them. I don't usually but I thought it would help dissolve the coffee better than just the natural juices released from the meat when spices (salt) applied.
 
I have an Oakridge rub I use and it has coffee in it..maybe espresso.
It is amazing but the directons from the manufacturer claims to sear at 600 degrees or above......the coffee reacts differently maybe with the high heat. I cannot remember the reasoning but remember the high heat sear. This rub was for beef not pork.
Something worth looking into?

Well, maybe if YOU are roasting the beans. For me the home user, not gonna happen. 600o ? I'd need a blow torch to get that temp :ROFLMAO:
