My First Spatchcocked Turkey

And it won't be my last!
Usually, we have turkey day at my mom's and Christmas at our house. Whoever hosts, cooks the proteins and we split the sides and desserts. But mom isn't getting any younger, so I was able to talk her into letting me handle the bird.
I started with a 12 pound injected, I mean pre-brined bird from a local grocery store and a handful of herbs from our garden.

I mixed the herbs with some unsalted butter.

And smeared it under this beasty!

And it all went on the kettle.

Just look at all that compound butter!
I'm not sure of he cooking temp, but an hour and a half later, we had this beauty!

I put it in a roasting pan,covered it with HD foil and into a cooler with a couple towels over the bird. An hour and a half later, we were at mom's house. After the sides were cooked, we sat down to this feast!

Holy wow! This was one of my better turkeys! Pammi wants me to cook them like this now. Okay, I think I will!:D
 
Phil, that is a great looking bird and a great looking table. Incredible what you can do in just 1.5 hours.
