Congratulations on a great cook! I, too, have a new WSM (18.5") and am dying to do ribs on it but it has been too dern cold with snow up the wazoo! In a few days we are supposed to have a bit of warming and I plan to put the ribs on. So far, I have only done Cornish Game Hens (they were terrific)..
I'll take pictures, etc.
