Ribs on the smoker with 3 chunks of Hickory. Had water in the pan. Never lifted lid for 6 hours only to put some Stubbs Hickory Bourbon sauce on. WSM ran steady between 250-268

Then the veggies are getting ready to go on the Performer for my homemade Salsa

In the Breville to get there mix on. Added Cilantro and a 1/2 a fresh Lime squeezed. S & P to taste

Looks like a keeper, if I've ever seen one! Winter or not, that looks like an excellent and delicious plate in which to dive!
