I started up the charcoal around 12:30 am Sunday morning. Started out as an 8.5 lb butt and ended up a pile of shredded goodness. It was my first overnight smoke and I awoke around 7:00 to a 197 degree readout on the maverick and hovering in stall at 163 degrees. I pulled off the middle ring and dome and added more charcoal. After letting it settle back in I added the top sections back on. I stirred the coals again at about the 12 hour mark after the stall had broken and we were cruising to victory.
Trimmed up the fat cap a bit before giving her a good rub down.
Rubbed down and ready for the grill.
On the grill we go, let the smoking begin.
14 hours later I'm pretty proud of my first butt. The bark looks good to me.
It came apart nice and easy.
A huge roasting pan of goodness.
Clean bone makes daddy proud.
Plated and ready for consumption. I mixed up a KC BBQ sauce for the left ones and a Carolina style vinegar sauce for the right.
Last but certainly not least, daddy cookin' makes for a happy wife.
