My 1st Whole Chicken cook on 18.5 WSM

Thanks for all the help on the message board in my other thread. now that I have finally read the site (which i should have done in the first place) i have cooked a successful bbq chicken! I just followed the beginner chicken guide and made some really good bbq chicken today. Rivaling even my local bbq joint (everett and jones)! Chicken was right on the money for crisp skin, tender meat, and great smoke flavor. Paired with my bbq sauce it was some of the best bbq chicken i ever had! not bad for a 1st try!


I followed the beninners guide, took a whole chicken, halfed it, rubbed it down, smoked it for about 2hrs 30min with 3 chunks of hickory (took way longer than 1h like in the guide), finished over direct heat. Came out great. Sauced it down with some sauce and had some bbq beans, rice and frys. It was good!

Trying to figure out why I'm up at 5:30 on a Saturday morning, drooling over you chicken! :)

Thanks!!!! Just had some leftovers for a late snack (3am here) I'm sold on these Weber Smokers now. i should have bought one years ago!!!

Looks absolutely awesome!!! Did you use the E&J sauce or something else? Since you're an east bay person, do you know about the Oaktown Smoke Shop? They make their own rubs on the spot! You can refill jars for a discount. I got some granulated honey from them and used it on some ribs along with a mustard sauce and it was incredible. I also really like their Caribbean jerk rub for chicken and their St. Louis rub for ribs. If you haven't been there, you should check it out =)

Thanks for asking! I gotta check out the oaktown smoke shop, I've actually never heard of it so I need to take a trip down there. I'll google it. I ended up buying this smoker because my mom had visited my uncle & brought me back 6 kinds of BBQ sauce from a BBQ joint way out in Arkansas. (Whole Hog Cafe) I needed a way to actually use all the sauce and have been eyeing a smoker for a while. I got some extra money right now so I decided why not now and bought the weber and started trying to learn. I actually have some E&J sauce in the fridge but I'mtrying to finish this Whole Hog Cafe sauce at the moment. Its really really good, and you can tell they made it fresh. Actually after I finish all my bbq sauce (Including the store bought E&J sauce) I'm going to try making some bbq sauce because there really is a huge difference. If you guys got some good recipies please let me know because I know zero about making bbq sauce. Fresh sauce (to me) is much much more flavorful than bottled sauce. The E&J sauce you get at the restaurant i much much prefer over their canned version and i'm not sure why that is!

#2 was the best by far, then #3, then #4. Turns out i like the tangy more vinegary based sauces best! Thanks for the feedback!
 
Yum! Big fan of leftovers here also. Glad you're happy with the new WSM. I only use mine a couple times a year. I'm planning on doing a packer next weekend, and I can't wait to fire it it up.

If you want your chicken to cook faster try removing the water pan. You'll get some really good heat then. Just remember to give the chicken a flip about every 30mins.
