Showed Bob Correll's chicken spiedini post to Kim and she gave me the look I love and I knew it was going to be on the menu soon. So thank you Mr. Correll.
Beautiful winter day in Montana today. Sun shining, 18 above. Enjoying it because it's supposed to get cold next week.
My view from my deck
Marinating boneless skinless chicken thighs in Italian dressing.
Dredged in Panko, Parmesan, garlic powder, salt and pepper
Kim making rice pilaf and a cheese sauce for the broccoli.
Cooking the skewered chicken indirect.
Then on the heat to finish. Didn't know what to expect as far as cooking time but total time on the grill was about 55 minutes
Plated picture after drizzling some butter with garlic and lemon juice.
The chicken was wonderful. Great recipe. Thanks for looking!
