I have always cooked 1 or 2 butts at a time on the WSM. Friday will be the first time I cook 4 at once.
I am planning on starting it with hot water, getting it above temp before introducing 40#s, letting the butts sit at room temp for a little while prior, and take into account it might take a little longer to get back up to temp once they are on.
The one thing I am not sure about, do I need to add a couple more chunks of wood?
I normally use 3 fist chunks of hickory, and 2 first chunks of pecan.
