More wood needed ?

I have always cooked 1 or 2 butts at a time on the WSM. Friday will be the first time I cook 4 at once.

I am planning on starting it with hot water, getting it above temp before introducing 40#s, letting the butts sit at room temp for a little while prior, and take into account it might take a little longer to get back up to temp once they are on.

The one thing I am not sure about, do I need to add a couple more chunks of wood?

I normally use 3 fist chunks of hickory, and 2 first chunks of pecan.

Thanks as always for the help!

Never cooked 4 butts but I would think that you won't need to add more smoke wood than you normally do, based on the reasoning that most of the smoke escapes out the vent anyway and by having more meat surface the smoke that you normally make will just have more surface to adhear to. Just my theory but makes sense to me.

I've never thought about it, but Mark makes sense to me.

Ever tried any fruitwood with the hickory? I usually use two hickory and three peach or apple chunks.

You should be fine with using the same amount. More of the smoke will get absorbed into the meat (because theres more) and less will be vented off. Good Luck, always fun to show off your skillz to a buncha friends.

Did 6 on a 22.5 WSM recently with about the same amount of wood you are speaking of using, best PP I've ever done. I'm not a fan of leaving the pork out to come up to room temp. Get your cooker settled in and put the pork on it will come back up pretty quickly.

Thanks everyone, I will go with the normal amount.

As for letting them come to room temp, the wont be out long enough to get too warm

Just a note - the sooner and colder you put the meat on, the better the smoke ring and more smoke flavor it will have.

I typically put the meat on right after I assemble the cooker. Yes, it takes a bit longer to come up to temp but the ring and smokiness is just right.

Wow that's a lot of wood. I use one piece of fruit wood..lol. I used to use two, but that was too smokey for me.

Did 6 butts on my 22.5" WSM, used 4 pieces of hickory and 2 pieces of mesquite burried way deep in the ring, and another 4 pieces of hickory and 2 pieces mesquite on the very top. Came out great!

I'd say that's a whole lot of wood, unless the chunks are pretty small. God only knows what the Bill that posted right before you would think.

Most of the chunks I get are about the size of 2 or 3 golf balls put together.

Yep, that's still a lot of wood, but to each his own.
