More Pizza!

Wow! Your pies are always incredible! Love the lazy Susan bearing!
Thanks, Richard.

I have to say that modifying the oven to use a rotating stone was a game changer! With the fixed stone and high heat, it was always dicey to do that first turn of the pie......hoping that the bottom had set enough so it wouldn't tear, etc. I managed ok with some disasters, but just being able to rotate the stone removes that issue completely, and helps to even out the temp gradient in the oven.

Oh, and the bearing was $20 (from a guy on pizzamaking.com, who de-zincs them, etc), and I had a round Weber stone already.

Nice work, Rich. You really love that ooni, huh? Impressive results!
Yeah, I really do like it, and I've dialed in my process. I think if I was looking at ovens now, I'd include the Gozney Arc/Arc XL in the mix, and there's also one from a small company in Italy called Pizza Party that I'd consider. Having said that, the Ooni is hard to beat in terms of performance while also maintaining some reasonable portability.

There are lots of good ways to make pizza, this one works the best for me (and I've tried a few......stone in oven, stone in grill, Kettle Pizza, GMG Pellet Grill insert......) :)
