I was in the grocery store really early this morning when I spotted this chuck marked down to less than half the normal cost. $9 bucks. So I took it home, rubbed it with a java rub, through it over some Stubbs charcoal really low and went to work. Later in the afternoon I added a couple sweets. removed it at 200 degrees, let it rest, pulled and ate. Sorry no grill pics, but I did use my kettle, "Shaun Method."

Hi Brian, the tips are still in good shape after about five uses. But I do see how they could get out of shape. If they melted the meat must have been really hot still. I do at least an hour rest and as much as three to four at times. So it does cool a little. They really need to start making metal ones.

Mac, believe it or not I bought this chuck at Safeway. I had to get milk for my son before work and I decided to check the meat aisle. Normally I buy meat at Costco.

By the way I tried some whiskey barrel chips that were given to me for this cook and the oak really penetrated well. You can see the pink in the pictures a little. I also used a mesquite honey from TJ's on the potatoes.

Compared to Jim and some of the others plates mine looks pretty boring. I need to work on my sides a little. It's just that I can't eat that much.

Shaun, I assume this was a chuck roast? I've never done pulled beef before but looks great. Sounds like you cooked low and slow - 225-250 maybe? Did you cook to a certain internal temp or just until tender? How long did it take? Thanks.
 
Hi Russell, I cooked around 275-325 degrees. It was 103 at my home yesterday, so it ran hot. I pulled it at 200 and it took about five hours. I used Stubbs and it worked well. Good stuff.
