More Bratwurst

I'll make this short since there are no Webers, and, for that matter, no cooking! :)

Lucky's had bone-in butts on sale for $1.99, so what's a guy to do? I don't have time to do a smoked sausage, so opted for my current favorite fresh bratwurst - Wisconsin Bratwurst. This is an all pork affair. Ground through my med plate (7mm, I think), mixed with spices until VERY tacky, then stuffed into 32-35mm casings (Syracuse Casing Co.) Got 18 five inch links, and about half a cup of loose mix out of the batch. Not pictured is the 2.5lbs of bulk breakfast sausage that I made with the rest of the ground pork.

After an overnight rest in the fridge, these will get frozen for future consumption.

Look’s good as always! It is amazing how prices vary throughout the country; you are all in & happy with $1.99/lb. & I passed at $1.39/lb. a couple of weeks ago. However, I have 2-3 butts in the freezer so I guess I can be a bit choosier, lol.
 
Too bad you included the stuffer in the photos, it stole the thunder from the sausages (which look fantastic)

Yeah, I know what brats look like but the stuffer will last a thousand years!

It's big and heavy, but it's functionally not really any different from today's modern stuffers. I enjoy getting to put something that old (1930's/1940's probably) into regular use! :)

Thanks for posting the recipe, it now on my to do list.

My Omi had a stuffer that was similar along with a smaller grinder.
I wish I knew enough to ask for them when she passed.
