Did some pepperoni the other day and yesterday it was bacon smoking.
About a three pound slab cured with Tender Quick, brown sugar and Penzeys California seasoned pepper. After three 20 minuet soaks and 24 hours on a rack drying in the refrigerator I put another layer of seasoned pepper and brown sugar just before smoking it.
Used the mini this time and three chunks of apple for the smoke, which is a little more then I usually do. Smoked for about 3 ½ hours at 160 until it hit 145
Bacon came out great a little sweeter and peppery with a nice smoky flavor.
My best bacon so far.
Today cooked a chicken on the Weber kettle gasser. That is the best chicken cooker ever, moist chicken and crispy skin every time.
Even the Winter Weber is making dinner for tonight.
At least somebody likes the snow, even sleeps in it.
Tomorrow Canadian Bacon day, my first try at that.
