Mojo Crillo Chicken

Grilled up some mojo crillo chicken yesterday using the roti basket.

I combined orange juice, lime juice, white vinegar, a small onion chopped, a few garlic cloves, couple tsps. cumin, Mexican oregano, salt and pepper, threw it into the magic bullet and blended it all up to make a puree. Poured it over the chicken and let it marinate overnight.

Here it is in the basket ready to go. And after taking this pic I realized I forgot to put the spit thru the basket first so then had to take the chicken out, insert spit and put chicken back in. Duh me.

Two charcoal baskets filled and I put the chicken on when the temp was around 400. After spinning for about a half hour some nice color was developing, and boy oh boy this chicken was starting to smell so good. I had some extra chicken that didn't fit in the basket so I put those pieces in the drip pan.

After 50-60 mins it was done. I covered it in foil and it stayed warm under there while the sides were grilling.

Grilled some baby potatoes, corn and asparagus. I found the grilling basket I used for the potatoes at Ross for 2 bucks!

I got caught up in watching the final rounds of the US Open so no plated pic.

The chicken was really flavorful and the potatoes got a drizzle of a sour cream/sriracha mixture. I will definitely be making this chicken again. Next time I think I'll put some potatoes in the drip pan to soak up some of the marinade.
