I'll spare you the profanities and ranting but long story short, my mother in law MISTAKENLY mistook MY 4 pound chuck roast, that I was going to do my first pepper stout beef with, for HER beef chuck cross rib roast and used it to make a pot roast. I won't go into how her roast was in a huge pan in the middle of the fridge and my chuckie was hidden on the bottom shelf, yet she claimed she couldn't find hers

Oh well, my question is, can I use a beef chuck cross rib roast for a pepper stout beef? I may not even use it cause it's been defrosted (left out on the counter over night....but I won't even get into that one) and sitting in the fridge since tuesday. I'm going to have to see if it starts smelling funny before I even think about using it.

Just smell it and you will know if its bad, left over night might have done it in. If it is bad go ahead and flip out on MIL again.

You're in dangerous waters...but you knew that.

I wouldn't be too happy about using a piece of meat left out all night.
I would let her decide what she wants to do with it.

Then I would try to forget about the whole mess, re-purchase a new piece of beef and move on.
From now on wrap your stuff up and put your name on it.

You guys are right, I don't want to risk it. Out it goes. And the in laws went back home thank goodness. But I won't get into my feeling of relief and joy...

How long is overnight? How cold was ambient temp? how big was the roast? My guess its still good but if your not comfortable give it to the dog.

Wow my family would kick you in the butt for throwing out perfectly good meat! Nothing wrong with leaving a completely frozen piece of meat out to thaw til morning been done for generations and can't think of anyone I know having any troubles ...

Maybe the OP can salt it up and pop it in the mail to ya !

:D

Lol well come to think of it, my father in law has stomach problems pretty often and my mother in law has IBS. I went to bed at 9pm Monday night and it wasn't there. I got up at 530am and saw it in the sink so I stuck it in the fridge where it's been ever since. It probably is fine but I wouldnt get to it till Sunday so in the trash it goes.

Forgot to mention the house usually holds at around 70 degrees. My wife and MIL are cold blooded but don't tell them I said that lol

I thaw meat out on the counter for 10-12 hours all the time if it's a bigger chunk of meat. Also keep in mind that you are cooking it way beyond the safe temp when making pepper stout beef.

I don't like thawing meat on the counter although plenty of people do. I work for my local city and had to go into a buffet after hours late one night (its a nation wide chain) and they had all the meat for the next day sitting out on the counter thawing. Never ate there again.
