Mexican Style Bacon Brisket Burgers

The ingredients for tonight’s dinner following a recipe that my wife Bev found:


Recipe:

(Actually this recipe is for Spicy Mexican Meatballs and called for ½ pound ground
pork and ½ pound sausage.) We like this version with ground beef so went with it.

1 pound of lean ground beef
1 egg
1 or 2 chipotle chilies in adobo sauce, minced (include the sauce that sticks to the chilies) we used 2.
½ cup grated pepper jack cheese
¼ cup plain or seasoned bread crumbs
1 teaspoon dried oregano
1 teaspoon kosher salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon ground black pepper
A pinch of red pepper flakes

To this mixture we added a cup of chopped brisket from the other day’s brisket cook. Mix all
together and form 4 ½ pound patties. We saw an episode of Diners, Drive-Ins and Dives the other
night that featured a chop house burger. The ingredients for the burger were entirely different
but one of the ingredients we saw that my wife wanted to add to her burger recipe was the brisket.

The Applewood bacon put onto the Performer, using RO lump and a chunk of mesquite.

Burgers are done, 2 with Jalapeno cheddar and 2 with smoked cheddar.


Plated with my wife’s tater tot casserole.


Recipe for the Tater Tot Casserole:
1 family bag of either hash browns or tater tots (we prefer tater tots)
2 cans of cream of mushroom soup
1 can of milk (just fill one of the empty mushroom soup cans with milk)
Tons of cheese (I guess you can figure out how cheesy you want it )
We have used sharp cheddar and pepper jack, but you can use what you like.

Heat the milk, mushroom soup and cheese until the cheese is melted.
Pour over the hash browns or tater tots.
Bake at 375 for 45 - 60 minutes, until golden brown and slightly crusty.
Let cool, eat and enjoy!!

Burgers were definitely delicious and juicy. The brisket added a different flavor and
texture to the burger. We really enjoyed them as well as the tater
tot casserole. Will do these again!

OK Mike, you need to stop this! I just shorted out my keyboard from drooling - luckily I have this spare one to use. I put some plastic over it to protect it...

And as an aside - THANK YOU for including your recipes for the dinner! This is getting copied and put in my file of stuff that NEEDS TO BE TRIED!!
 
Good stuff, Mike. Normally, I'm a bit of a purist when it comes to burgers (i.e. I just want good quality ground beef which is well seasoned and properly cooked, with nothing fancy for condiments). That being said, I can totally see myself enjoying your burgers, since everything looks so skillfully prepared.
