Mexican for the week and super short skirt tacos!!

Throwing a few things together today for tonight and for a couple mid week meals.
Everything I am making deserves cilantro, but the MRS hates it a lot, so I just add to my dish when eating, I have a nice fresh bunch for this week already.
First off I am making a verde sauce. This is for Tuesday nights chicken verde burrito’s. Nothing crazy, shredded chicken, verde, rice and cheese.
I am cooking the chicken spatchcock tomorrow on the performer. Shredding all the white meat for this meal.
Pics here are the verde sauce, the chicken and tonight’s protein which will be a marinated skirt steak.
Ingredients:
tomatillos, jalapeño, poblanos, white onion, garlic all oven roasted and de seeded….added to blender with salt, pepper, oregano, cumin.
Came out a bit thick, tomatillos are sticky kind of…..no limes were harmed in this sauce.

Will be starting my first homemade hot sauce in a few minutes with ingredients and pics.
Hopefully ending with pics of the protein and the chef’s plate.

This is a jalapeño hot sauce….ingredients are…
12 jalapeños de stemmed, white onion, garlic, oregano, salt, pepper, cumin, vinegar, water and the juice of 1 lime.
A few pics……it may have been a bit more green if I sweat the onions a bit less, and cooked the peppers for 3 minutes instead of 6 or 7 or whatever it was.
Came out good, not rip your face off but a good steady heat with surprisingly sweat back note.
Steak will be in a couple of hours hopefully, get the marinade started here shortly.

Hi Darryl, a Cilantro fan here also. Have you ever tried Culantro? I used to grow it some years ago.

Never have heard of it, and thanks, new iPad is about 10 times better than the 10 year old one I made myself use because it still worked.
 
Steak ready to go, nice fat, looking like a fall apart protein.
About 2 hours there and a quick sear and w3 are good to go.
Fresh salsa, fresh hot sauce, white onion, cilantro, steak on a crisped shell…..

Without trying to sound like a broken record…..these may have been the best tacos that decided to jump in my mouth.
Thin sliced skirt, red salsa, jalapeño hot sauce, finely diced white onion, cilantro.
I would say the freshness of it all is what made it, thanks for looking.

First sauce I made above went into tonight’s dinner.
Chicken chili verde burritos.
Pulled chicken breast, mixed in with the sauce, rice, cheese, and some canned refried beans.
Dipping in that jalapeño hot sauce, red salsa and sour cream.
Browned up with a bit of lard.
These were really good for a change, my plate was too much food.
