Used this recipe from Weber.com as my guide for the marinade. I doubled the marinade (halving the chipotles after my experience last week), and soaked a cut up whole fryer for few hours. Built a three zone fire, and went indirect with the pieces for about 35 minutes or so, flipping and rearranging pieces every six minutes. When they were a the proper temp, they looked like this:
No plated pics, but I had mine chopped with some beans and rice. Topped with some avocado and "taco" sauce. Very tasty, and will definitely make again!
