Mexi Sunday!

Howdy folks...we did the NRA banquet last nite and boy it was a rough evening...still looking for the truck that hit me...so it was a quite day at the Carter residence today!! Decided a little Mexican was on tap tonite!!
Started with a small Tri tip roast marinated indirect with a bit of hickory smoke.

Could have went for a couple of Jim's cold millers but didn't have anything like that so dark beer it was!!
Meat getting done.

After about an hour at 300 turned up the heat and added some rice.

Finished off the Tri with some searing!

Add some white corn tortillas!

Sliced up!

And plated with rice and Dutch oven pintos, sour cream and homemade salsa!!

Over all super meal...great smoke flavor! Hit the spot!
