Mex pizza?

Long time and so on.

I have been idle for so long now. Been taking a HUGE break from all social medias. Ive been cheking this site everyday and looking /reading all new posts but never posted anything. Once i start i cant stop and its taking alot of my time. Love every thread,and all these dinners...OHH my. But today we did something that was really good...and my Son Oliver said we have to post it. So hey..

Here we go:

We smoked a fresh bird. But we put a Tomatoe based cilantro/basil sauce under the skin. Nothing else.
Looked like crap,but we were gonna shred it anyways.


Ok chicken shredded,onto a THICK tortilla(a new thing i found in the store,its like 4 times thicker then a normal tortilla) The bread was covered with the same cilantro/basil sauce/cheese/chicken and a kiss of sriracha.


Baked indirect @ 400f. Time around 7 min.



A really good one. Oliver said that he love tacos and pizza better then a taco pizza? Ohh and for us swedes anything mex is taco...We dont do:
Tamales
Mole
Pozole
Cecinachicken
Mixiotes
Chile relleno
Barbacoa
Its all tacos baby....(with a twist) :D

Anyways here is the end resault with baby spin/onion/garlic sauce

Cant recomend the sauce under the skin idea...End resault tasted like chicken :cool: Ill go back to my basic brine

Glad to be seeing photos of your cooks once again, Daniel. The taco pizza looks fantastic...I almost think of it as an "open face burrito".
