Memphis-Style Ribs Low & Slow

I really prefer dry ribs over sauced. My wife prefers the sauced, but this go round I went with the dry. Did use a mop of cider vinegar, mustard and salt three or four times to keep the racks from drying out. Pit temp for this cook was a steady 250. Hickory chunks for smoke. Ribs done in around 5 1/2 hours. Sided them up with Parmesan Potato Wedges and Mexican Corn Off The Cob.

Rubbed the ribs down with a nice Memphis Rub and place in fridge for around 5 hours.

Got my WSM up to temp and got the racks on around 3:00 pm.

Didn't touch anything for an hour and a half. Then pulled lid to check and then apply mop. Getting some nice color.

Mopped.

Prepped the potatoes and put in fridge until later.

After another hour mopped again.

Another hour and another mop.

Shaved the cobs and finished off in my little 2 qt. DO.

Got the potatoes on the last hour of the cook.

At five hours they looked done, but I didn't like the way they probed. Decided to give them another half hour.

Second probe was much better and I knew they were done. Gave the ribs a little rest. Love the pull back from the bone.

This type of rib easily my favorite. That meat was so tender and moist and wonderful flavor from the rub. Eager to do ribs again. Hope you're all having a great weekend. Thanks for looking!
 
Those ribs look perfect. You really mopped up on that cook. That had to have been a wonderful dinner with those potatoes & corn.
 
Man that looks delicious and love the sides. We have a rack of ribs in the fridge with our rub, getting happy for tonight's dinner.
 
I agree with Barb (I'm no dummy) great looking meal. I can't believe it, here it's the end of August and were just doing our first BBs of the year today. Hope ours come out as nice as yours.
 
Another amazing Cliff cook! Those ribs are as good as it gets. I picked up a couple fresh ribs while at Spouts today for next weekend. After seeing your ribs, now I can't wait
