If you Google it, it will probably say that pipe dope is better for gas connections than the tape. Is it really? I don't know, I use pipe dope because that's what Weber used on the valves and other fittings for their manifolds. I won't tell anyone if you use tape instead 😄
Maybe I’ll pick up some pipe dope. Honestly it is easier to use vs tape lol. I’m actually getting ready for my own manifold restoration soon. This is my first real grill project. All this is very new to me and this forum helps
 
Why don’t you want to use gas rated tape?
Fittings are too small. When I was doing gas work here in the house (fairly extensive) my friend who's a licensed gas fitter explained that on smaller fittings tape (especially the thicker yellow tape) will bunch and cause issues while dope will not and will stay in the threads properly. On larger fittings either is fine but tape can be a little easier. I've stuck with the advice ever since and never had an issue
