Man Day!

Boss was gone for the day so I decided to have a man day while watching some Foosball and neck racing. Started out with a wild hair up my XXX to do a batch of jerky. As always, I broke the batch and don't even know what to with the stuff. Jerky is nemesis!

As I was cleaning my Fish tank! I got a uncontrollable desire for the taste of fish.

So I decided to get some wild caught Mahi( A treat in the Midwest) and filet minion!

Went with some Old skool,basic,Garlic roasted Yukons with green peppers,red onion and Amish Garlic butter. Just like how Grampa use to make them on the old 60's weber.

I was thinking about the Mahi and wanted to go back to my Baja day's. Cam up with a pit fired Peach and pineapple Fruit salsa that was a little too sweet. Stuff was amazing ,but a little to sweet and a little over pureed. I like it much more chunky.

Now for the Filet Minion! Kosher salt and cracked pepper. Let it sit at room temp for about 1 1/2. I chucked it on the smoker while the jerky was finishing at around 160degrees. Let the filet come up to 110. about 45min. Took it off and wrapped it in foil for 20min or so. Got a big ol heap of lump going in the kettle. Like on the verge of melting the thing down hot. Chucked my skillet on for that blacken mahi. Then slammed the FM on. A good soild min per side with lid off. Removed from flame and set it at the back of the kettle. Slam Mahi into skillet with butter and lemon pepper. Lid on for three min. Flip and maybe three more. Always wish I took action shots,but as always, too much going on and hands have three different layers of food on them. So anywho,Plated,drink beer, be fat and drink more beer. Everything came out full of win except the Jerky.

Everything looks great. You crammed a lot into your Man Day. For a minute there, I thought you were going to net a few out of your tank and crisp them up!

lol. For the people who know the African Cichlid world. It is really hard to keep a peaceful tank at times and they can be super expensive to get imported in. There are days I want to cook them all up when they decided to be brats.

Stone ipa is one oft favorite

Growing up in San Diego with Stone, It's my go to beer. I was lucky enough to have my best friend be a brewer for them about 20yrs ago when they were still working out of a storage unit in Vista Ca. those were dangerous days. He still sends me some of the good stuff every know and then. I drank three 22oz of these the other night and had to put a helmet on.

Food looks great. Love me some Stone beer. Luckily, they are looking at this area as their east coast location for a brewery and restaurant. Anxiously waiting for them to decided between here and two other places.

I've been to may Brewery's across the states. Stone is by the far the best. Those guys don't mess around. You will be one...

If you get a Brewery/Distribution center out there. It's more of a destination then a brewery.

Used to have an Oscar, and I believe I had a Jack Dempsey or two. Believe they are Cichlids.

They are both Cichlids. Oscars are part of the South American (Amazon River basin) Family and the Jacks are part of the "New World"(Mexico, Honduras)Family. Both species are a blast to collect. They can also be mean little bastards as well.

Todd. That looks like a quality day mate. Grub looks spot on. Pity your jerky didn't work out.

I have been doing jerky on my WSM, and get 100% great results ever time using the three day method. (See link below).
I know it's of no use if you want jerky.....NOW! But if you have some time this will work every time, honest.
