Mama's BBQ Chicken Thighs

BBQ Chicken Thighs

Mama (aka SWMBO) wanted good old fashioned BBQ chicken thighs so I laid out four, brined them, coated them with oil, hit them with some rotisserie rub, place them indirect on the kettle and let them rip.








Once they were near done I hit then with some homemade BourbonQ Sauce and started crisping the skin over the direct.



Yesterday we cooked some corn casserole and potatoes in cast iron on the WSM.





We used these leftovers as our sides tonight along with a beefsteak tomato from the garden hit with some SPOG.

Hey, those tomatoes are great looking too! I love this time of year. I am a tomato sandwich junkie. White bread, mayo, pepper, and thin sliced beefsteak tomato like yours...
 
Chicken thighs are the new chicken wings. Those look great. :wsm:

Put me down for wanting the recipe for that corn casserole too!
