Start with bacon....every manly sandwich has to have bacon. I put a few slabs on with a chunk of apple wood. The girls do love it when I smoke some bacon.

Earlier in the day I had taken some large shrimp and butterflied them. After the shrimp was butterflied I put them in a storage bag and added some rub that I had left over. Made sure that all of the rub was on the shrimp and put them back in the fridge for 3 hours.
After the bacon had cooked indirect at 250 for 30 minutes, I removed them and cut each strip in half.
For stuffing the shrimp I made a mixture of cream cheese and shredded Colby cheese....sound familiar?
I stuffed each shrimp with the cheese mixture and then wrapped in bacon.

There is a picture of the shrimp ready to go on the performer. I put on another chunk of apple wood to get that flavor of smoke. The reason I precooked the bacon is because the shrimp should be finished at around 25 minutes (time for 2 beers) @ 225.
Shrimp is done and is time to come off.

At this point you could just serve them as apps if you wanted to.

While the shrimp were cooking I made of dressing of sour cream, lime juice, chopped cilantro, red pepper sauce and salt.
I chopped up the bacon and shrimp and mixed in with the dressing and then put the mixture in a roll for a shrimp roll sammie.
Light dinner and a beer! I added extra red pepper sauce on mine.

I won't be cooking next weekend....I'm traveling to California to watch THE Ohio State take on the Cal Bears.
