Let me start by saying that I love chicken wings. Here they are after marinating for about 2 or so hours in garlic, onion, cilantro, NM chile powder, olive oil and lemon juice at the very end. I put them out to dry in a cooler for another 2 hours.

And everybody onto the grill with a few chunks of Pennsylvania fruitwood with a target temp of 350-375

Time to make the sauce and blue cheese dressing
Sauce ingredients (Beer was for the chef) oh and note! According to the invitation of the shower we are expecting our first! Feel free to come to the shower, just bring a cover dish

Blue cheese dressing ingredients

Dice up the peppers, onions, and garlic and soften in butter and oil, then add a couple more tablespoons of butter and apple cider vinegar

Then add Crystal, tobasco and dried peppers

Then put it through a blender and add sugar/honey and black pepper and let it reduce by a 1/4

An hour later its time for a quick sear

And done! Lip smacking and mouth watering. The blue cheese is so easy and I think is better than the bottle version

Congrats on the new addition Chris....I will be honest my mouth was watering as I saw and read your post. Nicely done.
