I can't believe it....25LBS Turkey cooked on Thanksgiving and as of Sunday there is none left 
The store(s) were way picked over, there was not much to chose from, but I happened upon some Pot Roasts (Chuck?) on clearance for $5 total ($1 per LBS) I thought...I could smoke it to 125 and let it rest then slice it for lunch meat, or I could smoke it to 200 and pull it. I figured it would be easier to make sliced sandwiches rather than pulled sandwiches, so the 125 cook got the nod
Rubbed in SPG, and smoked over Kingsford Mesquite Charcoal (first time in a long time)
4+ hours later, I had a IT of 125, so I pulled it for a 30 minute rest (I have to tell you, it smelled amazing)
After the rest, I sliced it up and bagged it for this week's lunches. I slice it as thin as I could, my slicer is a tad lacking, and the sizer moves without permission
I ate a slice or two, and I have to tell you, the Mesquite gave it a wonder taste. I will use this charcoal again
