Loin Back Ribs & Lazy Man's Pulled Pork

Today I decided to do some Memphis dry-style baby backs, plus a little experiment with pork butt strips I picked up at my local supermarket. Thanks for stopping by!

Here are ribs seasoned with a homemade rub, and the pork butt strips seasoned with just salt & pepper...

This cook was my first test drive of Wicked Good Charcoal. I think I like this stuff.

Today's wood of choice was North Atlantic Olive. Some action shots, too.

The days are still getting dark too early...

Racks off the grill.

On the cutting board ready for slicing.

A cutaway view of the ribs.

And finally, my experiment for lazy man's pulled pork. As expected, the pork butt strips are nowhere near as moist or tender as a full size pork butt, but on the plus side it had lots of bark.

nice looking ribs!!! I use Country style ribs to make cheater pulled pork all of the time. I foil them once they hit 165 and they are moist when done and fall apart real easy.

Awesome looking food. More importantly.....

Is that a performer adapted into a smoker? That homemade? Very cool all around!

Thank you everyone for the encouraging words!

@Luke P -- Performers & Kettles can be easily converted into a smoker with the Cajun Bandit BBQ Stacker. I've been very happy with it ever since I bought it last summer. I actually find myself using it more than my 18.5 WSM.
