Today I decided to do some Memphis dry-style baby backs, plus a little experiment with pork butt strips I picked up at my local supermarket. Thanks for stopping by!
Here are ribs seasoned with a homemade rub, and the pork butt strips seasoned with just salt & pepper...

This cook was my first test drive of Wicked Good Charcoal. I think I like this stuff.

Today's wood of choice was North Atlantic Olive. Some action shots, too.

The days are still getting dark too early...

And finally, my experiment for lazy man's pulled pork. As expected, the pork butt strips are nowhere near as moist or tender as a full size pork butt, but on the plus side it had lots of bark.
