Lobster Rolls

Had a pound of nice cooked lobster meat……wanted some rolls, this was my first time making them but it will not be my last.
Need a different or homemade mayo and more fresh squeezed lemon on top rather than in the mix.
Mayo, celery, lemon, salt, kampot black pepper and mostly claw meat.
Before anyone asks, we just don’t eat potato chips although they would have fit the bill very well.

I am in the middle of the country so it gets flown in to a seafood store that is large……amazing and has everything.
This was a pound of cooked lobster meat I froze….I bought 2 pounds of it for 2 occasions…..it’s expensive stuff.
